Scrumptious Saturday

I am SO not one for planning and preparing for meals. Most of you know that.

This last Monday I cleaned out a cupboard that had been bothering me for a while and found a bag of Cornbread Mix that I started one time but then didn't have any sugar. There was one part of the meal. I remembered that I had pork chops in the freezer that I needed to use. So I pulled those out to thaw.
Now I had to figure out what to do with them. I LOVE doing pork chops with cream of mushroom soup, but they don't ever taste as good (or look as good) as my mom's.
So onto Allrecipes.com to see if I could find anything.
That is when I found this - Marinated Baked Pork Chops.
After reading the comments (which I think you should always do when trying out a new recipe), I made more sauce than it called for for 4 chops and added about a tablespoon of minced garlic. They turned out fabulous! I shared them with my parents and even Dad liked them! They were juicy and very flavorful! And the sauce would have been really good on rice; My dad liked it on the cornbread... interesting!

Scrumptious Saturday

Delicious Chocolate Cake-in-a-Mug

I am sure that some of you may have heard of this... you take a mug that is microwave-safe, add some chocolate-cake-like ingredients, microwave and TADA!!! Chocolate Cake perfect for one!

Here is the recipe for all you chocoholics out there:
- Your favorite coffee mug (microwave safe)
- 4 T. flour
- 4 T. sugar
- 2 T. cocoa powder
- 2 T. sour cream
- 3 T. milk
- 3 T. oil
- splash of vanilla
- 3 T. chocolate chips (optional)
- 1 T. walnuts (or other nut, also optional)

Put all the dry ingredients into your mug and mix well. Add the sour cream, mix well then add the milk, oil and vanilla, mix well. If you are adding them, add the chocolate chips and nuts and lightly mix them in. Microwave for 2 1/2 minutes (more or less depending on your microwave). Let it sit for at least 2 minutes and then devour! It is big enough to share, if you are willing - but it is wonderful for an after the kids are in bed snack!

This recipe is a variation from this web site (thanks Jenn!). I read all the comments on the page and used their suggestions... Here are some more suggestions for those adventurous souls:
- white chocolate chips
- caramel sauce
- cranberries or any other berry

Scrumptious Saturday

Hehehe... I am going to a facial party later today and wanted to make something different to take along. I pulled out different cookbooks, magazines and pages of things and then came across a recipe that fit what I was looking for: Lemonade Cookies. And, yes, it is just how it sounds - with frozen lemonade concentrate! This is what they turned out to be:

They are fairly straight forward: 6 ingredients, 7-9 min cook time, brush with lemonade then sprinkle with sugar.

Oh, SO YUMMY!!!
